Tony Pope of Wild MorelSo many recipes call for fresh herbs which at any time of year can be expensive to buy and may not be as fresh as you might want. You could use commercially dried herbs, but their flavor is not as pronounced, and their nutritional value is less. So why not grow your own. They can be grown in small spaces and are a more economical and better alternative to dried herbs or those bought in the supermarket. Local Chef Tony Pope will talk about growing, picking and using fresh herbs at home. This presentation is sponsored by the Transylvania County Extension Master Gardener℠ program and is part of the monthly program of talks and demonstrations that will interest Master Gardeners℠, amateur gardeners, and the public at large.

Tony Pope, chef and owner of the Wild Morel Restaurant in Brevard, will share his expertise on how to use fresh herbs to infuse flavor into your recipes. Herbs can be grown at home and examples of ones that are frequently called for in recipes include: basil, chives, parsley, dill, marjoram, oregano, rosemary, sale and tarragon. The fresh herbs allow you to cook with high quality ingredients, which promotes high quality gourmet dishes. Tony will share how these herbs can be prepped, stored, and used in different cooking techniques, such as infusing them in oils or butters to complement a dish. Specific herbs have a flavor profile that can be used to enhance Italian or French dishes, for example. He will answer questions from the audience and share his years of experience as a chef.

Tony Pope is originally from West Virginia and graduated from Johnson and Wales Culinary School. He began his professional career in Charleston. While there, was honored to cook with Frank McMahon at the James Beard House. During his culinary journey he has worked with renowned chefs and at award-winning restaurants such as Susan Spicer’s Bayona in New Orleans. Tony is now settled in Brevard as the chef/owner at Wild Morel Restaurant and brings a cultured flavor to the food scene, a farm to table approach with French and Italian leanings to Wild Morel’s seasonal inspired menu.

The talk is sponsored by the Transylvania County Extension Master Gardeners℠ and will be on Tuesday April 8th, from 10 to 11 a.m., doors open at 9.30 a.m. The talk will be held in the Community Services Conference Room, at 106 E.
