Stem to Root: Cooking With Beets at Transylvania County Library

Beets are abundant at the farmers market this time of year. But what do you do with them?

Join FCS agent, Erin Massey for a free  interactive cooking demonstration at the Transylvania County Library from 1-2pm on July 25th. Taste a Roasted Beet Salad featuring a balsamic reduction and crumbled feta cheese. We'll also be learning how to utilize parts of the beet that often get thrown away, the leaves! Beet leaves can be cooked and eaten just like any other green. Similar to swiss chard, beet greens are one of the highest sources of iron and great for preventing iron-deficiency anemia. For optimal absorption of these nutrients consider pairing with some vitamin C sources or a citrus dressing. We will be preparing the beet greens both in a salad and sauteed, side dishes that can compliment any meal, but will more likely be the star of the show.
