Plan to join me, Renay Knapp, Family Consumer Science Agent for the Transylvania Cooperative Extension, at our office on 106 East Morgan Street in Brevard, one, two or all three hands-on food preservation workshops being offered in July.

These three hands-on classes involve preparing the produce and processing either in the hot water bath or in the pressure canner. Each class is offered once during the day and once in the evening to accommodate different schedules.

Hands-on classes offered are:

Cooked and Freezer Jams on Monday, July 9th, from 1 - 3 pm OR 6 - 8 pm
Fruits and Pickles on Thursday, July 19th, from 1 - 3 pm OR 6 - 8 pm
Vegetables on Tuesday, July 24th from 1 - 3 pm OR 6 - 8 pm
If you did not attend the introductory class on June 19th, please plan to come one hour early to get a lesson on the basics of canning.

The cost for each of these four classes is $10 per person, and if you would like to purchase a Ball Blue Book, they will be available for sale for $5. Pre-registration is necessary, so please call the Transylvania Cooperative Extension at 828/884-3109 to reserve your spot.

If you own mature forestland (or a nice wooded backyard) with good soil and drainage, ginseng may be a viable way to produce income from your underutilized woods.

Ginseng is a tricky plant to grow successfully and takes between 7-10 years to reach a size favored by the Asian markets to which it is exported. The market for ginseng has averaged over $750 per dried pound over the last few years. Because of its high value many people have been victims of theft over the years.

On November 30th, Cooperative Extension will be hosting a workshop on wild-simulated ginseng production.
Topics will include:
• Security on private property
• Site selection, soil fertility requirements, & companion plants
• Site preparation
• Planting methods
• Production issues—(pest mitigation & poaching issues)
• The market for ginseng

The workshop is free, but high quality stratified seed is being sold for $38.00 per ¼ pound. And the Transylvania Master Gardeners will be selling copies of “Growing & Marketing Ginseng and Other Woodland Medicinals.”

Please call or come by the Transylvania County Extension Office to register for workshop sessions. Checks may be made out to Transylvania County CES.

Timber or landscape trees destroyed by recent fires, hurricanes or other storms are “casualty losses” that may allow the property owners to take a deduction on their federal income tax returns. To help timber owners, as well as home owners, who suffered timber or landscape tree damages with their tax reporting, this webinar will focus on the new tax law changes that Congress passed in 2017 that affect the casualty loss deductions starting in the 2018 tax year.
